today. SUCKED. majorly. i woke up in a wicked mood. like a monster of a bad mood. the bad mood to KILL all bad moods. up until about 3:00 (in the afternoon folks) all i wanted to do was bury my head in my hands and have a giant sobfest. i doubt this is PMS, too. i’ve been weepy and emotional all day. i know the jist of why but i don’t think i really want to get into it right now seeing as i just pushed through that patch of thick grey clouds. but MAN, it’s been a rough day. i barely spoke a word until i got to work, which, THANKFULLY, went by quickly. and thank the universe it’s the weekend. and sunny. aioaisfldkhgawiisjfkaljsdfeahgahglkjadf UGH.

yesterday rocked in comparison to today. i ran my last practice 10k before the big REAL 10k on saturday! it took about an hour. AND it was my best run to date. in fact, i felt like i could of kept running but my left knee was starting to bother me so i slowed my roll and (reluctantly) stepped off the treadmill. bummerrrr.

PLUS i ate some good foods! AND created a new something-something! which i will share with you right meow…

breakfast first, though! started off with two slices of thebestbreadEVER!

it’s locally baked, too. ahh so good. i spread some MaraNatha DARK CHOCOLATE ALMOND BUTTER onto these babies and cut up half a nanner to top it all off. talk about heaven in my mouth. YUM. i LOVELOVELOVELOOOOVE MaraNatha’s dark chocolate almond butter. it’s incredibly delicious. i had some in my oatmeal this morning and daaaaang finding that little blob nearly made my day. so tasty.

but lunch is where i went all chef-like. i made curried “egg” salad! and by egg i mean tofu! here’s the ingredients:
half a block of firm or extra firm tofu
2.5-3 tbsp vegan “mayo” (i use vegenaise but there’s great recipes for cashew mayo out there too. would of done this but i was a) pressed for time and b) OUT OF CASHEWS. booo)
1 t curry powder
1/2 t turmeric
1 t nutritional yeast
1/4 t salt
dash of pepper
dash (or two!) of cayenne

what to do:
mash tofu in a bowl with a fork. add all the ingredients and blend well!

i wrapped mine in swiss chard leaves:


this might not look like much but DAAAMN it was good. candace loved it too! i highly recommend it. it’s vegan AND high in protein. not to mention high in BADASS FLAVORS!!!

anyway, i’m so glad this school week is OVER. i think i’m going to spend the rest of the day relaxing. i gotta rest up for that up coming run! plus, i still feel a little on the bleh side of things…
